Beef Paprika Goulash

This is a rich casserole combining the spicy sweetness off the paprika and caraway. This dish is versatile and can be enjoyed just as much with green vegetables as noodles.
Serves 6
Ingredients
• 2 tablespoons cornflour
• 750g lean casserole steak
• 1 tablespoon sunflower oil
• 50g bacon, chopped
• 3 garlic cloves, finely chopped
• 450g onions, grated
• 1 tablespoon caraway seeds
• 1 tablespoon smoked paprika – plus extra for garnish
• 600ml beef stock
• 2 tablespoons tomato puree
• Ground black pepper
• 0% fat Greek style yogurt to serve
Method
1. Place the beef and cornflour in a plastic bag. Ensuring that it is sealed, shake until the beef is lightly dusted in flour. .
2. Heat the oil in a casserole and add the bacon, garlic, onions, caraway and paprika, cooking for 3 minutes.
3. To the pan add the beef, then pour in the stock and stir in the tomato puree.
4. Season with black pepper and simmer. Then cover the pan and gently cook for 2 hours, or until the meat is tender and the sauce is rich. Stir occasionally.
5. Serve with a dollop of yogurt sprinkled with paprika
