Pan-fried Mullet with Olives and Tomatos

Dish Notes: This recipe is taken from Antony Worrall Thompson’s gi diet recipe book. This is a really quick and easy dish to rustle up – serve with green beans to further maintain a low GI count.

Serves 2

Ingredients
• 2 tablespoons black olive puree
• 2 medium sized red mullet (filleted)
• 1 tablespoon extra virgin olive oil
• 250g tomatos – deseeded and diced
• 4 teaspoons chopped tarragon
• 1 tablespoon chopped basil
• Ground black pepper
• Juice of a lime
• Green beans

Method
1. Spread the olive puree on the flesh side of the fillets.

2. Heat olive oil in a non-stick pan and cook the red mullet fillets for 3 minutes with their skin side up. Turn over and cook for a further 3 minutes. Remove from the pan and keep warm

3. Stir the tomatos, herbs and pepper in the frying pan until warm.

4. Add the lime juice to taste and pour this sauce over the red mullet fillets and serve with green beans.
