Spicy Chicken Fillets

Dish Notes: This tastes best if the chicken is marinated in the spices overnight as this gives it lots of flavour and helps prevent the chicken drying out.

Serves 4

Ingredients
• 4 garlic cloves crushed
• 150ml low-fat natural yogurt
• 1 tablespoon grated onion
• 1 chilli, deseeded and finely diced
• 1 teaspoon each of ground coriander, cumin, fenugreek, paprika and ginger
• Pinch of dry mustard powder
• 4 chicken breast fillets, cut into large strips
• Lime wedges

Method:
1. Mix together the garlic, yogurt, onion, chilli, spices and mustard powder. Add chicken and marinate overnight.
2. The next day scrape most of yogurt from chicken and chargrill or grill for 3-4mins each side.
3. Serve with lime wedges, brown basmati rice or green salad.
4. If there is any left over the chicken makes a great filling for tortilla wraps.
