Tandoori Crusted Salmon

Dish Notes: Using oats for this dish helps reduce the gi count of this dish.

Ingredients
• 1.5 tablespoons Tandoori curry paste
• 50g fresh breadcrumbs (wholegrain bread)
• 25g rough oats
• 2 tablespoons fresh chopped flat leaf parsley
• 1 teaspoon lemon zest
• 4 x 100g salmon fillets
• Juice of 1 lime

Method
1. Preheat oven to 180?C
2. Mix curry paste, breadcrumbs, oats, parsley and lemon zest
3. Put salmon on a non-stick baking sheet and coat with mixture patting down lightly
4. Cook for 20 mins
5. Remove from oven and squeeze over lime juice
6. Serve with brown rice and salad
